THE ESSENTIALS
1 cup brown rice
1 can chickpeas, drained and rinsed
4 cups broccoli florets
1 avocado, sliced
1-2 tsp olive oil
Tahini-Based Green Goddess Dressing
1/4 cup tahini
1/2 cup fresh parsley
1/4 cup fresh basil
2 tbsp fresh lemon juice
1 tbsp apple cider vinegar
2 cloves garlic
1/4 cup water (or more for thinning)
Salt & pepper, to taste
THE KITCHEN FLOW
Cook your rice according to package directions
Toss chickpeas and broccoli with olive oil, salt, and pepper. Air-fry at 400°F for about 10 minutes until crispy and golden.
(No air fryer? Roast in the oven at 425°F for 20 minutes.)
Make the Green Goddess Dressing: Combine all dressing ingredients in a blender or food processor. Blend until smooth and creamy, adding water a bit at a time to reach your desired consistency. Taste and adjust seasoning.
Make your bowl: Start with a scoop of rice, layer on crispy chickpeas and broccoli, add mixed greens, then top with avocado slices.
