THE ESSENTIALS

  • 1 cup brown rice

  • 1 can chickpeas, drained and rinsed

  • 4 cups broccoli florets

  • 1 avocado, sliced

  • 1-2 tsp olive oil

    Tahini-Based Green Goddess Dressing

  • 1/4 cup tahini

  • 1/2 cup fresh parsley

  • 1/4 cup fresh basil

  • 2 tbsp fresh lemon juice

  • 1 tbsp apple cider vinegar

  • 2 cloves garlic

  • 1/4 cup water (or more for thinning)

  • Salt & pepper, to taste

THE KITCHEN FLOW

  • Cook your rice according to package directions

  • Toss chickpeas and broccoli with olive oil, salt, and pepper. Air-fry at 400°F for about 10 minutes until crispy and golden.

    (No air fryer? Roast in the oven at 425°F for 20 minutes.)

  • Make the Green Goddess Dressing: Combine all dressing ingredients in a blender or food processor. Blend until smooth and creamy, adding water a bit at a time to reach your desired consistency. Taste and adjust seasoning.

  • Make your bowl: Start with a scoop of rice, layer on crispy chickpeas and broccoli, add mixed greens, then top with avocado slices.

  • Drizzle homemade Green Goddess Dressing—or snag one from the store, I don’t judge.
