ESSENTIALS

  • 2 cups vegetable broth (or chicken/bone broth)

  • 1/2 block firm tofu, cut into bite-size cubes

  • 1 carrot, diced

  • 1 small head brocolli, chopped into florets

  • 1 serving rice noodles

KITHCEN FLOW

  • Bring the base to life – Pour broth into a small pot and bring to a gentle boil over medium-high heat.

  • Prep while it heats – Cube your tofu, dice the carrot, and chop the broccoli.

  • Cook the veggies – Once the broth is boiling, add tofu, carrot, and broccoli. Let them simmer for 3–5 minutes until just tender.

  • Noodle time – Add rice noodles directly on top of the soup, making sure they’re submerged. Cook for about 3 minutes or until soft.

  • Serve + enjoy – Remove from heat, let it cool slightly, and pour into your favorite bowl. Cozy up and dig in.
